I’ve taken the opportunity to give up refined sugar for lent!

I mean, I hardly eat refined sugar as you know if you’ve been following my blog for a while. However, while I was backpacking I couldn’t avoid it and since I’ve been back, and in an office environment, I’ve been struggling to say no when treats are laid out on the hub. I have given it up again to prove to myself that I do have the willpower, and to try and get rid of the cravings.

If you want to quit or just cut down on sugar, little sweet replacements like these coconut cashew balls, are a great thing to take to work to curb your mid-morning or mid-afternoon cravings. Or if you ever need a little energy boost pre/post gym, these are perfect. They also take no time at all to make!

Preparation time: 10-15 mins

Serves: 9 balls

Ingredients:

1/2 cup cashews
1/2 cup dates
1/2 cup melted coconut oil
1/4 cup ground flaxseed
1/4 cup desiccated coconut
1/4 cup coconut flour
1 tbsp chia seeds
1/4 cup roughly chopped nuts
1 tsp vanilla essence

Method:

Using a high-powered blender, or food processor, blitz the cashews until they turn into a rough powder. Remove from the blender and put it into a mixing bowl.

Add the dates and coconut to the blender and blend into a purée. Add the ground cashews, flaxseed, coconut flour, half the desiccated coconut and vanilla essence, and blend again.

Scoop the contents into the mixing bowl and add the chia seeds and chopped nuts and mix thoroughly.

With clean hands, roll the mixture up into balls of equal size.

Pour the remaining desiccated coconut into a bowl and gently roll each ball in it, to coat them one by one.

Keep them in the fridge in an airtight container for up to 1 week, or alternatively freeze them!
